Hi Regina! You're right, the powdered sugar does fade - but I love the look immediately upon serving. Shredded coconut or chopped nuts are delicious as well.
I add very little coconut oil - I love the texture it gives!
And there are no chocolate chips in this, just Dutch cocoa. So no added sugar.
Candied ginger sounds amazing! I wholeheartedly agree with the suggestion of trial and error.

If you roll the date balls in powdered sugar or cocoa/cacao powder, the powder gets absorbed into the truffle & won’t look like the photos after a day or so.
I prefer to add shredded unsweetened coconut to the truffle & roll them in coconut afterward.

I don’t add any oil to mine. If the ‘batter’ looks dry i add a tablespoon of the water I used for soaking the dates.

You can add cacao pieces instead of chocolate chips to make them w/o any processes sugar. This provides a little crunch to the truffle.

Make a batch & play around with flavors! I will add chili powder to my next batch. I’ve done a batch with candied ginger in the center too.
