This zesty citrus marinade for chicken is made with a blend of oranges, grapefruits, lemons & limes, injecting your meal with maximum flavor.

As someone who loves experimenting in the kitchen, I've found that one of the simplest ways to infuse chicken with a whole load of flavor is through a citrus dressing. Now, you know I absolutely love citrus: they make for vibrant salads, flavor rice and soup, go well with pasta and cheese and add texture and flavor to moist and flavorful cakes. But pairing chicken and citrus was not a natural thing for me.

Well, dear reader, I'm sorry I waited this long to try citrus and chicken. The vibrant blend of lemon, lime, and orange juices doesn't just tenderize the meat; it also adds a refreshing zestiness that elevates the dish. It's a versatile marinade that pairs wonderfully with the succulent texture of chicken, whether you choose to grill, bake, or even sauté the meat in a pan.

Step-by-step instructions to make the perfect citrus chicken marinade 

Make the Marinade 

The process of making a citrus marinade for chicken.

Combine all ingredients: freshly squeezed orange, grapefruit, lime, and lemon juice with their respective zests, along with olive oil, minced garlic, Dijon mustard, honey, salt, and pepper.  Whisk together and adjust quantities as needed.

Top Tip

You can turn this citrus marinade into a citrus salad vinaigrette. All you need to do is add about ¼ cup more olive oil to the mix, and you're all set to use it on your favorite salad greens as a citrus salad dressing!

Storage And Freezer Instructions

For proper storage, place the mixed dressing in an airtight container if not used immediately. Refrigerate for up to 2 days. If chicken is marinating, refrigerate for no more than 4 hours to prevent excess protein breakdown. For freezing, place the chicken in a freezer-safe bag with marinade, removing excess air, and lay it flat in the freezer. Best used within 3 months for optimal taste. Thaw overnight in the refrigerator before use.

Top Tips for Chicken Marinade Recipe

When I make a citrus marinade for chicken, there are some key pointers I always bear in mind:

  • Zesty flavors shine through when I use fresh fruits—lemons, limes, and oranges. The brighter, the more flavorful the marinade.
  • To prevent the marinade from being too acidic, I pair citrus juice with olive oil or another fat. This not only balances the flavor but also helps to keep the chicken moist and tender.
  • I've learned that marinating for 1 to 4 hours is just right. Too short, and the flavors won't penetrate; too long, especially with lime or lemon juice, and the meat can become mushy.
  • Garlic, herbs, and even a bit of honey or sugar can complement the citrus and add depth to the marinade.
  • I always discard the marinade after use since it contains raw chicken juices. If I need sauce, I set aside some of my marinade before adding the chicken.

Lastly, I pay close attention while cooking the marinated chicken. Citrus sugars can burn, so whether I'm grilling or pan-searing, I keep an eye on the heat and turn the chicken often to ensure it's beautifully caramelized, not charred.

A fluffy bed of couscous or quinoa works wonders in soaking up that zesty marinade, providing a balance to the tangy flavor of the chicken. Alternatively, a fresh garden salad or lemony roasted vegetables, like asparagus and bell peppers, add freshness to the plate.  

Your can also try a chill white bean salad with feta and bell peppers for a creamy texture that can make the meal even more filling.

For a sweet finish, I recommend a citrus-infused dessert. A simple cheesecake with lemon notes ties in beautifully with the citrus theme.

Remember, the key is to keep it light and refreshing to match the bright flavors of your chicken!

Ingredients
  

  • ¼ cup orange juice
  • ¼ cup grapefruit juice
  • 1 tablespoon lime juice
  • 1 tablespoon lemon juice
  • 1 tablespoon orange zest
  • 1 tablespoon grapefruit zest
  • 1 teaspoon lime zest
  • 1 teaspoon lemon zest
