And if hard boiled eggs are left over, mix them in a bowl using a fork with (a) a boiled and peeled potato (1 egg /1 potato), (b) finely chopped fresh onion -for taste- a moderate amount, (c) chopped dill and (d) some olive oil.
And if more hard boiled eggs are available, cut them in half VERY GENTLY going through the shell lengthwise, scoop out everything, mix with chopped onion and parsley (or dill), mash with a fork, refill the half shells and fry in a small amount of vegetable oil, mixture face down.
