In reply to Kathleen. So to be honest, a moussaka made without eggplant is NOT a moussaka.... But it would be a delicious casserole! You can just omit it, or use roasted red peppers as one of the layers. If you want to use mushrooms, you can do that too, just sautee them with onion first.

I made this recipe for brunch on Thanksgiving morning. I substituted ground beef for lentils due to an allergy. Everyone loved it even the kids.

I wish you had a cookbook that is an actual book. I am sure I would love every recipe.

In reply to John McLaughlin. Yes! I remove the bechamel from this gluten free moussaka recipe for a gluten free vegan moussaka. Alternatively, you can also use non-dairy products to make the gluten free bechamel sauce (soy or cashew milk are my fave milks).

In reply to Dee. You could make the bechamel vegan by using vegan butter and soy milk or rice cream. Skip the eggs, you can do without them.

I tried Moussaka years ago when I spent a vacation week in Greece and fell in love with this dish immediately. Let me try your recipe this weekend, if it tastes at least remotely good as it looks on the photos, I'm in for a treat 🙂
