I love eggplant but I’ve never thought about putting it on a sandwich with potatoes must try. Do you have any bread recommendations for this recipe if I don’t usually keep pita on hand?

This was such a delicious new-to-me recipe! I've been trying to get more veggies in at breakfast and this tasty pita sandwich is a yummy way to do it. I went with scrambled eggs as I prefer the texture but otherwise followed the recipe exactly and it was really good. I'll be making this sabich again.

Wow this recipe was out of this world with all the flavours! The fried eggplant, crispy and savory, formed a delicious base that paired wonderfully with the creamy tahini sauce. Can't wait to make it again for my weekend lunch.

I had never heard of or tried sabich sandwiches before attempting this recipe. I was just searching online for new ways to cook eggplant and came across this. Wow! I love this! It's filling and satisfying without being heavy. Great way to get your veggies and protein in.
