Banana Bread Recipe

Paleo Chocolate

Gather the ingredients

– 3 ripe bananas  – ⅓ cup melted coconut oil – ⅔ cup coconut sugar – 3 flax eggs or regular eggs – ⅓ cup almond milk or applesauce – 1 teaspoon vanilla – 1 teaspoon ground cinnamon – Up to ½ teaspoon nutmeg – Pinch of ground cloves – 1 teaspoon baking soda – Pinch of salt – 1 cup coconut flour – 1 cup almond flour – 2 oz unsweetened baking chocolate

Mash the bananas with the coconut oil

Add in the coconut sugar, eggs or flax eggs, almond milk/ applesauce, vanilla and spices. Sprinkle the baking soda and salt over the mixture and mix in.

Add the flours. Mix just enough to incorporate. Stir in the chopped baking chocolate, and fold to combine.

Transfer mixture into a buttered 4×8 inch loaf pan. 

Bake for 50-60 minutes. Cool on a rack.

Slice and  serve!

Serve with a strong black tea. Paleo banana bread can get crumbly
