Balkan Cheesy Eggplant Dumplings

Crispy on the inside and brimming with gooey goodness on the inside, cheesy Balkan bourekas are little pockets of flaky homemade dough. They are filled to bursting with luscious eggplant, cooked in aromatic cumin-laced tomato sauce and paired with gooey Jarlsberg.

Gather Your Ingredients -BALKAN BOUREKAS-

– Flour – Butter cubed – Olive oil – Water – Baking powder – Salt  – Eggplant  – Tomato  – Cumin  – Parsley – Cilantro – Feta  – Jarlsberg cheese  – Pepper

Prepare the filing by adding olive oil and eggplant to a pan. Cooking until browned. Add tomatoes, herbs and spices. Cook 5 more minutes then add feta and Jarlsberg cheese.

Create Balkan bourekas by rolling out the dough and placing a teaspoon of filling in the center. Close bourekas into a crescent shape, pinching the edges to seal.

Transfer Balkan bourekas to baking sheet. In a small bowl, scramble egg with a drop of water. Brush the top of each bourekas with egg wash, and sprinkle with sesame. Bake until golden.
