Irish Boxty Pancakes

Crispy on the outside and fluffy on the inside, these potato cakes are everything you need to kickstart an Irish-inspired meal.

INGREDIENTS Potatoes Gluten-free flour or all-purpose flour Milk Egg Butter for frying Salt and pepper

STEP 1

Add flour, egg, milk, salt and pepper to the mashed potato and grated potato mixture. Mix into thick batter.

STEP 2

Melt butter in a non-stick pan or cast-iron griddle over medium heat. Scoop batter into pan. Fry until crispy and browned on both sides.

STEP 3

Repeat with remaining batter.

STEP 4

Enjoy with sour cream.
