Kale  Apple Slaw

How to Make

This crunchy and texturized salad is mellowed out with a creamy homemade poppyseed dressing. It's the perfect balanced side dish for a duck or chicken main dish!

– 1 bunch kale – 2 Cosmic Crisp apples – ¼ red onion finely diced – 3 tablespoon apple cider vinegar – 2 tablespoon honey

– 1 tablespoon Dijon mustard – 3 teaspoon poppy seeds – 3 tablespoon olive oil – ¼ teaspoon Salt – ⅛ teaspoon pepper

Using your hands, remove the ribs of the kale

Slice the kale into thin, narrow ribbons.

To make dressing, add finely diced onion and the rest of the dressing ingredients to a jar.

Seal tightly and shake until emulsified.

Add to bowl with kale and apples, and toss until the kale apple slaw is fully coated.
