Irish Colcannon

Vegetarian irish colcannon recipe is the perfect Irish side dish: mashed potatoes with green onions and spinach.

INGREDIENTS Potatoes peeled and chopped Butter Chopped spinach Green onions minced Milk or cream Salt and pepper

STEP 1

Boil potatoes until fork tender, about 15-20 minutes. Drain. In another bowl, beat the eggs until well combined. Mash potatoes with milk or cream.

STEP 2

Melt butter in pan over medium-high heat. Add spinach and green onions. Cook 1-2 minutes until wilted.

STEP 3

Add spinach mixture to potatoes. Mash together. Season with salt and pepper and serve with extra butter.
