Mexican Fish Tacos with Pickled Onions

Pink fish tacos combine flaky marinated fish with bright, vinegary pickled onions and creamy feta or purple cabbage slaw, and crunchy, sweet salad topper.

Gather Your Ingredients -FISH TACOS-

– White fish like tilapia cod or sole – Lemon and lime juice – Olive oil – Ground cumin – Cayenne powder/ Hot paprika to taste – salt and pepper – Red onion sliced into rings – White wine vinegar – Sugar – Salt

Mix lemon juice, olive oil, cumin, chili/paprika and salt and pepper in a shallow dish. Add fish and marinate overnight in the fridge.

In a small bowl, mix vinegar, sugar and salt until sugar and salt dissolve. Place onions in a jar or a bowl, and pour vinegar mixture on top. Cover and let marinade for at least an hour.

Add oil to pan and fry fish for 5 minutes on one side, and, lowering heat to medium, 3 minutes on the other. Remove to a plate and flake with a fork.–

To assemble tacos, layer flaked fish, pickled onions and feta, salsa, salad topper and fresh cilantro.
