This simple, quick-to-prep vegan broth is a versatile recipe that can be used as a base for soups, ramen, risotto and other flavorful dishes.

INGREDIENTS Fresh shiitake mushrooms sliced (or 1/2 cup dried shiitake mushrooms) Onion sliced Garlic cloves smashed Parsley Lemon peel Bay leaves Green onions sliced Black pepper Water or vegetable broth

STEP 1

In a large pot, combine all the ingredients except for green onions. Bring to a boil over high heat.

STEP 2

Reduce the heat to low, cover, and simmer for 45 minutes (1 hour if using dried mushrooms).

STEP 3

Strain the stock through a fine mesh strainer, pressing on solids to extract maximum flavor. Discard the solids.

STEP 4

Stir in the sliced green onions. Serve hot.
