Blueberry Cottage Cheese Popsicles

Blueberry cottage cheese popsicles are a delicious summer treat that is a combo of high protein blueberry ice cream on a popsicle stick. Use vegan yogurt and maple syrup instead of cottage cheese for vegan popsicles.

Equipment

Ingredients

  • 2 cups cottage cheese
  • 1 cup fresh blueberries
  • ¼ cup honey
  • 1 teaspoon lemon juice

Instructions

  • Blend cottage cheese until smooth.
  • Add honey and lemon juice, blend to combine.
  • Fold blueberries into cottage cheese mixture.
  • Pour into popsicle molds.
  • Insert popsicle sticks.
  • Freeze for at least 6 hours.
  • Run molds under warm water to remove popsicles.

Notes

Use small curd cottage cheese for smoother texture.
Adjust honey to taste.
Use vegan yogurt and maple syrup for vegan popsicles.
