Date Sweetened Eggnog

Ingredients
- 2 cups whole milk or coconut milk
- 1 cup heavy cream or cashew cream
- 5 large Medjool dates pitted
- 3 large eggs
- 1 teaspoon pure vanilla extract
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cinnamon
- Pinch of salt
- ¼ cup bourbon or rum optional
Instructions
- Blend milk, cream, and dates until completely smooth. Strain through a fine sieve if needed.
- In a medium saucepan, whisk eggs, vanilla, nutmeg, cinnamon, and salt.
- Slowly whisk in the blended milk mixture.
- Cook over medium-low heat, stirring constantly, until mixture thickens slightly and coats the back of a spoon, about 8–10 minutes. Do not boil.
- Remove from heat and stir in bourbon or rum if using.
- Chill for at least 2 hours. Serve cold with a sprinkle of nutmeg.
