Ingredients

  • 4 potatoes peeled and chopped
  • 5-6 tablespoons butter
  • 3 cups chopped spinach
  • ½ cup green onions minced
  • 1 cup milk or cream
  • Salt and pepper

Instructions

  • Boil potatoes until fork tender, about 15-20 minutes. Drain.
  • Melt butter in pan over medium-high heat. Add spinach and green onions. Cook 1-2 minutes until wilted.
  • Mash potatoes with milk or cream.
  • Add spinach mixture to potatoes. Mash together.
  • Season with salt and pepper.
  • Serve hot with extra butter.
