A heatwave can take the ambition out of dinner before you even open the fridge. By late afternoon, the kitchen feels warmer than it should, everyone's tired, and turning on the stove sounds like one request too many. I've stopped trying to prove anything on days like that. If dinner can be cold, fresh, and put together without making the house hotter, I'm calling it a very good meal.

These 13 no-cook dinners are for the weeks when the weather has already asked enough and feeding everyone shouldn't ask for much more.

I always hard-boil a giant batch of eggs on Sunday so I can avoid my stove later. Layering them with pre-cooked bacon and crisp garden vegetables turns a basic salad plate into a heavy evening feast.

Blending raw vegetables with a handful of soaked cashews creates a surprisingly rich texture without any cream. This chilled soup relies on fresh basil and lime to cool you down from the inside out.

Opening a simple can of chickpeas is the fastest route to a filling, fiber-packed vegetarian dinner. Shaking the beans in a basic lemon mustard dressing gives you a tangy plate in two minutes flat.

I ate this simple canned fish combination constantly as a kid because the texture is so incredibly crunchy. Dicing sour pickles and sweet corn directly into the bowl gives your dinner a refreshing pop.

Cold sliced turkey from the deli counter is a light option when heavy food sounds unappealing. Tossing the protein with crisp greens gives you a clean dinner that takes less than five minutes to build.

I highly recommend hitting your cucumbers with a heavy rolling pin to break open their smooth sides. Those jagged, crushed edges act like little traps for the juicy tomato dressing as the vegetables sit.

Swapping out the heavy mayonnaise for mashed avocado adds a great buttery texture to your basic canned fish. It gives you a creamy, filling dinner choice that keeps your kitchen cool and comfortable.
