The refrigerator is opened much more on really hot days. Not because anyone knows exactly what they want, but because standing in front of the cold air somehow feels like a perfectly reasonable plan.

That's usually how I know it's time for cold side dishes. They're fresh and uncomplicated, and they don't ask much of you when the heat has already taken enough.

These 15 recipes are the ones I reach for when cooking feels negotiable, but eating something bright, crisp, and satisfying still sounds like a very good idea.

A simple bag of shredded cabbage requires no cooking whatsoever to transform into a crisp, ice-cold side dish. A quick squeeze of fresh lime juice and a hint of garlic creates a sharp flavor that immediately snaps you out of a heat coma. It takes minutes to mix and stays crunchy in the cooler.

Whacking your cucumbers with a rolling pin is a fantastic way to take out some heat-induced frustration while prepping a lazy lunch. Cracking them open creates rough, jagged edges that do a wonderful job of trapping all the cold, flavorful juices from your market tomatoes. It requires no thinking at all.
