Some nights, the hardest part of making dinner is not cooking it. It is standing in front of the fridge, looking at the same chicken, pasta, ground beef, and vegetables you always have, and realizing you do not want to make the same meals again. I know that feeling well.

After cooking for my family for years, I still run out of ideas and get tired of the usual rotation. These 21 easy weeknight dinners are the recipes I reach for when dinner starts to feel boring. They bring new flavors and fresh ideas to the table without making a busy weeknight any harder.

Hawaiian Loco Moco

The first time I saw gravy, rice, a burger patty, and a fried egg sharing a plate, I had questions. One bite answered most of them. The runny yolk pulls everything together.
