I always leave the farmers market with more than I planned to buy. One basket somehow turns into two, and before I know it, there are tomatoes on the counter, peaches in a bowl, zucchini in the crisper, and a bunch of herbs I was sure I'd use right away. A few days later, I open the fridge and hope I didn't forget anything hiding in the back.

These 25 farmers market recipes are the ones I reach for before that happens. They help me turn fresh summer produce into meals and desserts while everything is still at its best, so the tomatoes, peaches, zucchini, herbs, and everything else I couldn't resist actually make it to the table instead of the compost.

Stuffed Tomatoes

Save the biggest tomatoes in your basket for this recipe because they were made for it. They're filled with rice, herbs, and crunchy nuts, then baked until the tomatoes soften and all their juices soak into the filling. It is an easy way to turn beautiful tomatoes into something everyone remembers.

Creamy Beet Risotto With Goat Cheese

Beets can do so much more than end up in another salad, and this risotto proves it. As the rice slowly cooks, the grated beets melt right in, giving every spoonful a creamy texture and a beautiful pink color. A little goat cheese on top adds a tangy finish that makes the whole dish feel special without much extra work.

Cucumber Melon Salad with Mint Honey Lime Dressing

This is the bowl I pull out when the day is too hot for heavy food. Crisp cucumber, sweet melon, fresh mint, and a quick honey-lime dressing come together in minutes, and every bite tastes cool and refreshing. Bring it to a picnic or backyard dinner, and don't be surprised when people ask for the recipe.

Cheesy Zucchini Casserole

Every summer I end up looking for one more way to use zucchini, and this casserole never lets me down. Layers of zucchini bake with cream, garlic, cheese, and crunchy breadcrumbs until the top turns golden and the inside stays creamy. It works just as well next to grilled meat as it does as the star of a simple dinner.

Honey Butter Skillet Corn

Good luck expecting leftovers because this corn disappears fast. Fresh kernels cook in butter and honey until they're glossy, sweet, and lightly caramelized around the edges. It is a simple side that lets fresh summer corn do what it does best.

Grilled Eggplant with Feta and Harissa Oil

Fire and eggplant are one of my favorite summer pairings because the smoky flavor completely changes the vegetable. Once the slices are tender, they're finished with spicy harissa oil and crumbled feta that softens from the heat. It is an easy side that feels special enough to bring to the table when friends come over.

Snow Crab Stuffed Zucchini Rolls

Zucchini has a funny way of piling up this time of year, and these rolls are one of my favorite ways to use it before another one lands on the counter. Thin slices of zucchini wrap around a sweet crab and shrimp filling, then bake until the edges are lightly crisp while the seafood stays tender. They look like something you'd order at a nice restaurant, but they're surprisingly easy to pull together at home.

Blueberry Coconut Almond Overnight Oats

Busy mornings get a little easier when breakfast is already waiting in the fridge. Blueberries soften overnight in creamy coconut milk while the oats become thick and the almonds add a little crunch. It is a simple way to enjoy fresh summer berries before the season slips away.

Spiced Grilled Corn

Fresh corn barely needs any help when it's picked at the right time, and this recipe lets its sweet flavor do most of the work. The ears are grilled until lightly charred, then brushed with butter and finished with chili powder and fresh lime. It is an easy side that tastes like summer and belongs next to just about anything coming off the grill.

Some sandwiches are worth getting a little messy for, and this is definitely one of them. Crispy fried eggplant, tender potatoes, creamy tahini, and tangy pickles are tucked into warm pita for big flavor in every bite. If your market haul included beautiful eggplants, this is a delicious place to start.

Basil Peach Cobbler

Sweet, juicy peaches deserve more than sitting in a fruit bowl until they're too soft to eat. They bake under a buttery biscuit topping while fresh basil adds a light, fresh flavor that makes every bite a little more interesting. Serve it warm with ice cream if you really want to make those peaches shine.

Tomato and Smashed Cucumber Salad

When tomatoes are juicy and cucumbers are crisp, I skip the complicated salads and make this instead. Smashing the cucumbers gives them lots of little edges that catch the garlicky dressing, while the tomatoes add plenty of sweet juice to the bowl. Keep a piece of bread nearby because you'll want to soak up every last bit.

Ground Beef Zucchini and Rice Casserole

This is the recipe I reach for when the zucchini drawer is full and everyone is asking what's for dinner. Ground beef, rice, shredded zucchini, and plenty of cheese bake together until the casserole is hot, hearty, and bubbling around the edges. The zucchini blends right into the filling, so it's an easy way to use up extra squash without anyone thinking twice about it.

Ground Turkey Stuffed Peppers

Bell peppers always seem like a great idea at the market, but they can sit in the fridge longer than planned. Filling them with seasoned turkey gives them a whole new purpose, and baking them until they're tender brings out their natural sweetness. Add a little parsley before serving, and dinner is ready without much fuss.

Eggplant Shakshuka

One bite of this dish, and you'll see why eggplant belongs in shakshuka. It cooks down with tomatoes and warm spices until the sauce is thick and rich, then eggs are cracked right into the pan to finish cooking. Grab plenty of crusty bread because you'll want to scoop up every bit of the sauce.

Watermelon Popsicles

It always seems like a watermelon looks smaller at the market than it does once you get it home. Instead of racing to finish it, blend the sweet fruit with fresh lime juice and freeze it into simple popsicles. They are bright, refreshing, and one of the easiest ways to make sure none of that watermelon goes to waste.

Air Fryer Zucchini Fritters With Feta

Crispy on the outside and soft in the middle, these zucchini fritters are the kind of snack that disappears as fast as you make them. The shredded zucchini is squeezed dry before it's mixed with feta and cooked in the air fryer, which keeps them light instead of greasy. They are a delicious way to use a few more zucchini before they get forgotten in the fridge.

Roasted Pepper And Tomato Vegan Quiche With Sweet Potato Crust

Most people notice the sweet potato crust first, but the roasted peppers and tomatoes are what make this quiche so good. They bake into a creamy tofu filling that slices beautifully and tastes just as good the next day. It is one of those recipes that helps you use several summer vegetables without making dinner feel complicated.

Vegan Pasta Primavera

I like this pasta because the vegetables still taste like themselves when dinner is done. The zucchini, snap peas, and tomatoes cook quickly, so they stay bright, crisp, and full of fresh flavor before getting tossed with the pasta. It is exactly the kind of meal I want to make while summer vegetables are at their best.

Spicy Cucumber Salad With Chili Crisp Oil

Some cucumbers are meant for pickles, but these are much better tossed into this quick salad instead. A short salt soak keeps them extra crunchy before they're coated in chili crisp oil with just the right amount of heat. It comes together in minutes and somehow tastes even better after a few bites.

Crustless Zucchini Quiche

Skip the pie crust and let the fresh zucchini do the heavy lifting in this easy quiche. Eggs and cheese bake around thin slices of zucchini until everything is tender, fluffy, and packed with flavor. It is one of those recipes that tastes just as good for tomorrow's lunch as it does fresh from the oven.

Vegetarian Stuffed Eggplant

I never think of this as a side dish because it is filling enough to be dinner all on its own. The eggplant is scooped out, mixed with grains and seasonings, then packed back into the shells before baking until everything is soft and tender. If you brought home a couple of beautiful eggplants from the farmers market, this recipe gives them the attention they deserve.

Tofu In Creamy Zucchini And Mushroom Sauce

A white plate features a serving of white rice on one side, topped with a dollop of white sauce or sour cream. The other side includes a stew-like dish with chunks of meat and mushrooms, garnished with chopped fresh herbs.

If you've already made grilled zucchini and don't want another pan of it, this creamy dinner is a nice change. Tofu, mushrooms, and fresh zucchini simmer together in a simple sour cream sauce until everything is rich, silky, and full of flavor. Spoon it over rice or grains, and suddenly that extra zucchini feels like the best thing you brought home.

Stewed Okra & Tomatoes

If you've never been sure what to do with fresh okra, this is the recipe I'd start with. The okra slowly simmers with ripe tomatoes until the vegetables become tender and the tomatoes cook down into a rich, savory sauce. Spoon it over rice or serve it with warm bread, and you'll have a simple meal that lets two summer favorites shine without much effort.

Italian Eggplant Parmigiana

The hardest part of this recipe is waiting a few minutes before digging in. Layers of tender eggplant, tomato sauce, and bubbling cheese come together in the oven until every bite is rich and comforting. Make it while eggplants are still in season, and you'll remember why this dish has been loved for generations.

Your best market finds deserve better than the back of the fridge, so pick a recipe and get cooking.
