Every summer, I completely underestimate peaches. I tell myself one basket will be plenty, then I taste the first ripe one on the drive home and immediately start wondering if I should've bought more instead. That's happened often enough that I've stopped pretending I'll show any restraint once peach season arrives.

Luckily, peaches are easy to love in just about everything. These 13 recipes are the reason an extra basket never feels like a bad decision for very long.

Peaches and almonds just belong together, especially when you bake them into a flaky, French-style tart. This beautiful dessert uses almond paste on the bottom to block the juices from making the crust soggy.

When your fresh peach basket runs empty, grab a few cans from the pantry to make a warm, buttery crisp. A big splash of fresh lemon juice cuts the sweet syrup and makes that crunchy pecan topping taste incredible.

Adding sweet peaches and salty, paper-thin ham to your pizza night will completely change how you use up fresh fruit. Baking this personal pie in your air fryer crisps the bottom instantly without letting the juicy fruit make the crust soggy.

If you have a pile of soft peaches about to bruise, baking a cobbler with fresh basil is the best way to save them. Just sprinkle a little sugar on the dough before baking to get a perfectly crisp, crackly biscuit lid.

You might not think to pair fatty salmon with sweet peaches, but grilling them together brings out a wonderful, smoky flavor. These sturdy skewers alternate the fish and fruit so the peaches char beautifully without turning mushy or falling into the coals.

Peach Pandowdy

If you love pie but hate rolling out perfect circles, an old-fashioned pandowdy is the cozy, rustic answer. Breaking up the top crust halfway through baking lets the bubbling, sweet peach juices create a gorgeous, sticky glaze.

Peach Pretzel Salad Dessert

Sweet peaches, fluffy cream, and a salty pretzel crust make the most satisfying, old-school treat you can bring to a cookout. This nostalgic dessert stays incredibly crunchy if you let the baked pretzel crust cool completely before adding the sweet fruit layers.

You do not need perfect pastry skills to bake a gorgeous, juicy dessert with your leftover summer fruit. A rustic galette lets you simply fold the rough crust edges over sliced peaches and creamy mascarpone for a stress-free bake.

Summer in a bowl means trading your usual tomatoes for a mix of ripe peaches and fresh, creamy mozzarella. Toss the sliced fruit with a pinch of salt first to draw out excess moisture so your salad never turns soggy.

Fancy weekend brunch is way better when you fold sweet, herb-simmered peaches and fluffy ricotta into warm crepes. Swirling a quick splash of melted butter in your hot skillet keeps the thin crepes from tearing when you flip them.

Stuffed Peaches

Stuffing fresh peaches with goat cheese and honey is my favorite shortcut for a fancy-feeling, warm appetizer. Bake them until the cheese is warm and soft so it stays inside instead of melting into a puddle.

Keep a box of cake mix in your pantry for those nights when you want a warm peach dessert with almost zero dishes. Drizzling melted butter evenly over the top layer prevents any dry pockets of flour for a perfectly golden cake.

My favorite way to show off a mountain of juicy peaches is rolling them up in a vintage, pillowy sponge cake. Roll the warm, gluten-free cake in a clean kitchen towel first so it shapes easily without cracking or breaking apart.

Pick your favorite and let those ripe peaches do what they do best.
