One thing I have noticed at potlucks is that nobody is ever truly done eating when a good side dish is on the table. People finish their plates, push back their chairs, and declare themselves completely full. Then someone walks by with a casserole, a pasta salad, or a dish they somehow missed the first time around, and suddenly there is room for another scoop.

Crispy Smashed Baby Potatoes

A standard potato salad can get a bit boring. What you want to do here is boil these first, smash them flat right on the baking sheet, and roast them on high heat. Every single edge gets super crispy like a chip, but the inside stays really soft and buttery.

If you think you hate sprouts, it's probably just because you haven't tried them charred in an air fryer. It turns the loose outer leaves into literal chips. I toss them with some salty feta, pomegranate seeds, and balsamic so you don't get any of that bitter veggie taste.

Middle Eastern Roasted Cauliflower

Cauliflower takes on whatever flavor you give it, and blasting it in a hot oven completely changes it. You want to leave it in until the tops get super dark and caramelized. It coaxes out this amazing nutty sweetness, and it ends up so tender it melts in your mouth.

Nobody wants soggy broccoli at a party, so the key is to make sure the florets are bone-dry before they go into the oven. I toss them with a rich, garlicky tahini sauce that coats every single piece. It makes the whole kitchen smell incredible.

This is perfect if you can't decide between pizza or a fresh salad. I mix up the pepperoni, cubed mozzarella, and olives in a zesty dressing before adding the lettuce. That way, the flavors sink in but the romaine stays crisp and doesn't get weighed down.

My biggest rule for potatoes is using a heavy cast-iron skillet and keeping the fire slow. It takes a little patience, but that's how you get that perfect, crispy gold crust on the bottom. I fry them with lots of salt and sweet onions, and it always hits the spot.

Let's all agree to skip the canned soup this year. Instead, do a super quick blanch on some fresh green beans so they keep their bright color and snap, then toss them with a quick homemade cream sauce and tons of crispy fried onions. It's a million times better.

Fruit at a party can sometimes taste too sweet on its own. Adding thin slices of onion and crunchy nuts helps fix that. The whole bowl empties out while the main meal is still being cut.

Hasselback Potatoes

Everyone reaches for these potatoes first when I serve them because the crispy layers are hard to resist. Cutting thin slices almost all the way through lets the salt and fat get right to the middle, while the layers fan out like the pages of a book and turn completely brittle in the oven. The plate grows lighter while the main meal sits cooling.

I know combining sweet pineapple chunks with sharp cheddar cheese sounds completely crazy, but it just works. You top it with crushed Ritz crackers before baking, and that salty, buttery crunch with the hot, bubbling fruit juice is just unreal.

Sweet potatoes have so much natural sugar, and if you roast them thinly, those juices leak out and turn into a sticky, caramelized glaze right in the pan. I serve them over a cold, tangy layer of cream cheese because the hot-and-cold combo is so good.

If you want a side dish that gets everyone talking, this is it. The deep purple color is 100% natural, and I whip them with a good block of cold butter and coconut milk so they turn out incredibly silky. People always take a little scoop out of curiosity and then go back for a mountain of it.

The main thing with kale is you have to massage the leaves with your hands and the poppy seed dressing for a few minutes to soften them up. Once you do that, toss in some tart apple matchsticks. It's great for a potluck because it stays crisp for hours.

I throw my beets right over an open flame or a super hot pan until the skins get charred and just slide right off. It concentrates all their sweetness. Then I spread them over cold, garlicky Greek yogurt, and the purple swirls look beautiful on a table.

Falafel-style Israeli Cabbage Salad

Cabbage is great when you need a lot of crunch on a budget. I shred it super thin so it really drinks up a bright dressing of lemon, cumin, and sesame seeds. It's light, raw, and feels so good when you need a break from heavy party food.

Zucchini holds a ton of water, so salting and draining the slices beforehand is a required step if you don't want a soggy mess. I bake it with golden breadcrumbs and a bubbling cheese crust, and the garlic smell fills the whole yard.

Regular macaroni salad can be a little boring, so I swap out the celery for a ton of crunchy dill pickles and add a big splash of pickle juice right into the mayo dressing. It gives it this amazing, tangy kick that pairs perfectly with anything off the grill.

Mayo or heavy cream can feel a bit too heavy on a scorching afternoon, so I make a bright green sauce instead. I just blend up tons of fresh parsley, cilantro, garlic, and olive oil, and bake it right into the cauliflower so it stays light and fresh.
