How to Make Date-Sweetened Eggnog

This delicious eggnog is naturally sweetened with dates and rich and creamy, perfect for cozy holiday mornings or festive gatherings with family. It can be spiced with cinnamon and nutmeg, making each glass bring the comforting aroma of the holiday season. Follow these steps to create silky, flavorful eggnog that both kids and adults enjoy alike.

Blend the Milk, Cream, and Dates

Combine your milk of choice and cream in a high-speed blender along with the pitted Medjool dates. Blend until smooth and no visible pieces of date remain. This may take a full minute, depending on the strength of your blender. 

If the dates were on the firmer side, blend a little longer to achieve that velvety texture that makes Date Sweetened Eggnog so satisfying. Once blended, pour the mixture through a fine mesh sieve to catch any bits that did not fully break down. This extra step ensures a silky, custard-like finish.

Feel free to increase the amount of dates or add another sweetener of choice.

Whisk the Eggs and Spices

In a medium saucepan, whisk the eggs thoroughly until the yolks and whites are fully combined. Add the vanilla, nutmeg, cinnamon, and a pinch of salt. The spices will float at first, but keep whisking until they dissolve into the eggs and create a fragrant base. This step builds the classic eggnog flavor before the milk mixture even touches the pan.

Slowly Combine the Mixtures

Pour the blended milk mixture into the saucepan in a slow, steady stream while whisking constantly. Adding it gradually helps temper the eggs so they warm gently rather than scramble. The mixture should become smooth and cohesive as the ingredients come together.

Cook Until Thickened

Place the saucepan over medium-low heat. Stir the mixture constantly with a wooden spoon or heatproof spatula. Over the next 8 to 10 minutes, it will begin to thicken slightly and eventually coat the back of the spoon. Take your time here. The key is patience and gentle heat. Avoid letting the mixture boil, which can cause curdling.

Add the Alcohol (Optional)

When the eggnog reaches the perfect consistency, remove the saucepan from the heat. Stir in the bourbon, rum, brandy, or other liqueur of your choice, if you are using it. The warmth of the custard helps the flavors meld together beautifully.

Measure ingredients accurately - While pita dough is forgiving, small differences in flour, yogurt, or water can affect texture. Use a kitchen scale if possible for consistent results every time.

Let the dough rest between handling - Even outside of rising, giving the dough short rests while shaping or rolling allows gluten to relax, making rolling easier and improving puffing.

Keep the dough covered while working - Pita dough dries quickly when exposed to air. Cover any unused portions with a towel or plastic wrap during shaping to prevent cracking or tough edges.

  • 2 cups whole milk or coconut milk
  • 1 cup heavy cream or cashew cream
  • 5 large Medjool dates pitted
  • 3 large eggs
