Dinner can be ready, and the table can still feel like it's missing something. That happens in my kitchen more often than I'd like to admit. The chicken is cooked or the pasta is done, but I still find myself opening the fridge one more time, looking for something to round out the meal. It usually doesn't take much. One extra dish can change the whole feeling of dinner.

That's why I keep coming back to these 21 side dish recipes. They don't ask for hours in the kitchen. They're the kinds of recipes that help turn an ordinary weeknight dinner into a complete meal.

Give ripe tomatoes a few minutes in a hot pan, and they burst into a simple sauce with soft garlic and plenty of sweet flavor. Spoon everything over chicken, fish, pasta, or toasted bread, and you've added something fresh without making another complicated dish. It's one of my favorite ways to wake up a dinner that feels a little plain.
