  • 1 ยพ cups gluten-free flour If your blend doesn't have xanthan gum, add 1 teaspoon of xanthan gum to the recipe.
  • 1 cup  sugar
  • ยฝ cup brown sugar
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking sode
  • ยผ teaspoon salt
  • 2 eggs
  • 1 15 oz can pumpkin puree
  • ยฝ cup oil
  • 1 teaspoon vanilla

Oat Topping (optional):

  • ยฝ cup gluten-free oats
  • ยผ cup brown sugar
  • 1 teaspoon pumpkin pie spice

Instructions
 

  • Preheat oven to 375°F. Line muffin tin.
  • Mix dry ingredients.
  • In another bowl, whisk eggs, pumpkin, oil, and vanilla.
