Easy healthy blueberry cottage cheese popsicles

Blueberry cottage cheese popsicles are healthy frozen treats that are packed with protein and make for an excellent summer snack that kids and adults love!

Introduction

During hot summer days, my kids come home from daycare and run towards the fridge in search of cool, icy and refreshing treats. As their health-conscious mom, it's my priority to make sure that these are also nutritious. Enter, these blueberry cottage cheese popsicles!

These blueberry popsicles combine creamy cottage cheese with sweet  fresh blueberries. Sweetened with just a touch of honey, this recipe is a great healthy alternative to traditional ice cream, offering protein and calcium while still being a sweet summer treat.

What is Cottage Cheese Ice Cream?

Cottage cheese ice cream has exploded on TikTok, with countless videos praising its texture and high protein content. Of course, as someone who tends to browse TikTok mindlessly before bed often does research on food trends, I had to give this seemingly easy ice cream a treat - but with a twist of putting it in popsicle molds.

And honestly, friends, it couldn't be easier. The protein popsicles trend involves blending cottage cheese until smooth and adding flavors to create a protein-rich frozen dessert. My blueberry cottage cheese popsicles freeze this mixture into convenient popsicles.

Equipment

I made these popsicles in silicone popsicle molds. I can't praise these molds enough - they are easy to use, easy to wash and great for making popsicles and creamsicles.

My only recommendation is, if you have a small freezer where these molds may not lie flat, try these durable mini popsicle molds instead - they come with a little plastic tray that prevents them from spilling or overflowing.

I also make these in the cookie souper cubes molds, which are fantastic for making two-bite ice cream pops. I also love making miniature, single bite blueberry cottage cheese molds in chocolate molds.

Ingredients

Here's what you need to make these popsicles:

  • Cottage Cheese: Forms the creamy base and adds protein.
  • Blueberries: Add natural sweetness and antioxidants.
  • Honey: A natural sweetener that works well with blueberries.
  • Lemon Juice: Adds a bit of tartness to balance the sweetness.

Directions for blueberry cottage cheese popsicles

Blend cottage cheese

Blend the cottage cheese until smooth.

Add honey and lemon juice to the blended cottage cheese. Blend again to mix well.

Fold in blueberries

Fold the fresh blueberries into the cottage cheese mixture. This keeps the berries whole. If you want to color your popsicles purple, set aside about half the berries. With the remainder, blend your blueberries or smash them with a fork for more texture.

Pour into popsicle molds

Pour the mixture into popsicle molds. You can use small paper cups or ice cube trays if you don't have molds. 

Insert popsicle sticks into each mold. For paper cups, cover the tops with aluminum foil and poke the sticks through the center.

Freeze

Freeze for at least 6 hours, or overnight for best results.

Serve popsicles

To remove popsicles, bend the silicone molds until the popsicles come out. And voila, your high protein blueberry ice cream pops are ready to eat!

Variations

A purple silicone mold holds eight frozen yogurt bites, each embedded with blueberries. One bite has been removed and is placed to the right of the mold. The mold and bites are on a white marble surface scattered with more blueberries.

You can try other fruits in these homemade popsicles like strawberries, raspberries, or mixed berries. You can even use frozen berries! Use vegan or Greek yogurt instead of cottage cheese. Adding vanilla extract or cinnamon can change the flavor. For a quick protein snack, freeze the mixture in ice cube trays, chocolate molds or Souper Cubes. For a chocolate drizzle, a bit of melted chocolate chips or ready-made chocolate sauce is best!

Top Tips

Use small curd cottage cheese for the smoothest texture. If you like more texture, use regular cottage cheese and blend it less. Taste the mixture before freezing and adjust the honey as needed - some blueberries are sweeter than others.

Accompanying Dishes
