Apples and hummus - a match made in heaven

Pita bread with hummus and apples may sound like a strange sandwich combination - and that's because it really is. But once you try this little healthy bite, made crunchy cucumbers, microgreens and our very own healthy hummus recipe, you'll forget you ever ate pita bread in any other way!

When I was in university, our student cafe served a quasi-Middle Eastern hummus sandwich. Inside two pieces of bread were nestled cucumber, sprouts and thin, crisp slices of apple.

For weeks I eyed that sandwich, wondering how it was going to taste. When I thought about what to eat with hummus, apple never factored high on that list. Cucumber and sprouts, that I could get. But apples and hummus? That combination both attracted and repelled me.

Then one day, I tried the apple and hummus sandwich. And my tastebuds rejoiced. The sweetness of the apples played beautifully against the tangy, lemony and garlicky hummus. The cucumbers and apples provided a nice crunch. And the microgreens just added a burst of peppery flavour and more healthy vitamins.

All together, this apple and hummus sandwich became the perfect lunch - one I couldn't wait to recreate. And once you taste it, you won't be able to wait, either.

Ingredient Spotlight: Cosmic Crisp Apples

I knew I just had to make pita bread with hummus and apples bread when I tried the new Cosmic Crisp Washington State Apples.

The Cosmic Crisp apple was released to the market in January, after 20 years of research and classical breeding at Washington State University (which, if you're like me and you care about that sort of thing, means this apple is non-GMO).

Cosmic Crisps are a cross between the 'Enterprise' and 'Honeycrisp'.  This makes them crispier and sweeter than other varieties, and naturally slow to brown. In fact, I've had half-cut or sliced Cosmic Crisp apples in my fridge for a whole day, with barely any browning around the edges! I love using these apples as a filling option for my Bosnian Pita pies as well.

But what made this apple perfect to eat with hummus was its natural snap, crunchy texture and delicate, juicy sweetness. All of this provided the perfect counter-balance to my homemade healthy hummus recipe, with its garlic and lemon!

Do Apple and Hummus Go Together?

Absolutely! Apples have a natural sweetness and tang to them. This works beautifully with the savory, garlicky and lemony flavour of hummus.

Additionally, apples that are crisp like the Cosmic Crisp provide a good contrast with the creaminess of hummus. If you're not having an apple and hummus pita, I recommend you try dipping apples into your hummus - this is really a delicious, healthy snack combo!

Why you must try this easy lunch

Apples and hummus pita bread bites are a delicious lunch option that goes beyond the boring old tuna or egg sandwich, for days when you don't have time to make these amazing quinoa sweet potato wraps. They'll also make a snappy little appetizer, if that's your jam! These pita breads with apples and hummus are:

  • vegan
  • ready in minutes
  • easy to put together
  • delicious
  • endlessly customizable (feel free to remove any of the other ingredients!)
  • portable
  • can be made in advance
  • easily scaleable - feel free to turn this into one large pita sandwich, or make many small pita breads with apples and hummus

Ingredients for Apple and hummus pita bread

Apple and hummus pita bread is one of my easiest lunch recipes! All you need is mini pita breads (or one large pita bread), Cosmic Crisp apples and cucumbers for extra crunch. Microgreens of your choice (I used radish sprouts and snow pea sprouts but you can use whatever you like)

Most important for this recipe: Hummus! I encourage you to make my healthy hummus recipe, for which you'll need: can of chickpeas, garlic, lemon, tahini, olive oil and salt & pepper)

    Directions for Apple and Hummus Pita Bread

    Prep the ingredients

    Assemble all your ingredients. Slice the cucumber into long, diagonal slices (they look prettier!). Slice the apples. Rinse the microgreens.

    Finally, if you're going to make homemade hummus, get out the food processor or high powered blender.

    Make the hummus

    To make my healthy hummus recipe, add 1 can of chickpeas and 2 cloves of garlic to food processor and pulse until well processed. Add tahini, lemon juice, salt and cumin, and process until well combined, about 5 minutes. Slowly drizzle in 2 tablespoons of olive oil. Check texture - if it's smooth and silky, omit water - but I usually add about ¼ cup to really get the texture I like. Process another 5 minutes. Taste and adjust flavours.

    Assemble the pita bread with hummus and apples

    Arrange your mini pitas or large pita on a plate or cutting board. Smear a generous amount of hummus - 2 TBs for a mini pita, or much more than that for a large pita bread.

    Top with cucumber, apples, and microgreens, in that order. Drizzle with olive oil and sprinkle with salt. Finally, top with another slice of apple, for looks.

    And that's it - you're ready to dig into your lunch!

    Scaling the recipe

    This recipe makes 8 mini pita bread bites, or 1 large pita bread. If you make my hummus recipe, you'll end up with some leftovers. You can easily increase the recipe to make more - in fact, I encourage you to do so as they keep well!

    Storage

    Kept in an airtight container, pita bread with hummus and apples will last two days. Because Cosmic Crisp apples are so slow to brown, you can even slice them ahead of time and not worry! If you keep all the components separately, then you can enjoy these pita bites for up to 4 days.

    The hummus will last fives days.

    Making in Advance

    My healthy garlic hummus, which is the only part of this pita bread with apples and hummus that really requires any work, can easily be made in advance. It will keep for a few days, so you've got time to play with here.

    I suggest making the hummus in the evening when you've got time, and storing it in a portable little container. Then the next day, dress your pita with hummus in the morning, or right when you're ready to eat lunch. Top it with apples, cucumbers and sprouts, and voila - you're ready for a Middle Eastern partay in your mouth.

    Dominant flavors and ingredients

    This unusual lunch sandwich takes the traditional pita bread with hummus and takes it up about 1,000 notches. The flavours of these apple and hummus pita breads are sweet, crunchy, garlicky and creamy all at the same time.

    If you cannot eat sprouts, feel free to omit them. If you want to skip the cucumbers, be my guest.

    Top tips

    Making apple and hummus pita breads for lunch couldn't be any easier. If you're looking for some tips, this is the advice I got:

    • Make the hummus yourself. Homemade healthy hummus is so much better, fresher and healthier than the preservative-filled store-bought version - plus it takes about 10 minutes to make. So honestly, just do it.
    • Get real Cosmic Crisp apples for this recipe. While Honey Crisp or Gala will both taste good, nothing compares to the snap and sweetness of the Honey Crisp

    Adaptations

    These apple and hummus pita breads are naturally vegetarian and vegan.

    To add some protein, I also recommend adding cheddar cheese or turkey to these pitas!

    Gluten-free

    To make this apple and hummus treat gluten-free, use your favourite gluten-free bread. In a pinch, even warmed up corn tortillas will work!

    Paleo

    If you're abstaining from chickpeas for paleo reasons, then use almond butter, smashed avocado or homemade cauliflower hummus for the recipe.

    Keto

    Unfortunately, this recipe cannot be easily made keto because of the apples.

    You can add any of the following ingredients to these apple and hummus pita breads to make them even more interesting!

    • Carrot slices
    • Smashed avocado
    • Cooked chicken breast
    • Sliced turkey breast
    • Onions
    • Switch cucumbers for mild pickles

    • 8 mini pita breads or one large pita bread
    • 1 Cosmic Crisp apple
    • 1 Lebanese cucumber
    • ½ cup microgreens of your choice I used radish sprouts and snow pea sprouts
    • 1 cup garlic hummus recipe below, or your choice of hummus

    For garlic hummus:

    • 1 can of chickpeas
    • 2 garlic cloves
    • ½ lemon
    • ¼ cup tahini
    • 2 TBs olive oil
    • salt & pepper
